Roasted Romanesco with Penne

This simple, low-effort dish is perfect for those lazy nights when you don’t wanna go out, you don’t wanna cook, but you wanna eat! It requires almost no effort on your part, it’s healthy, and you likely already have all the ingredients!

Ingredients

  • 1 head Romanesco
  • 3 cloves garlic thinly sliced
  • salt and pepper to taste
  • 2 Tbsp olive oil for roasting
  • 1 box Penne pasta (12-16 ounces )
