Oven Baked Alaskan Cod with Roasted Vegetables

Ingredients:

4 cod fillets

1 tsp paprika

2 tsp salt

1 tsp fresh pepper

2 tomatoes diced

1 cup corn

1 long green chili roasted diced

1 red bell pepper roasted diced

1 Tbsp garlic sliced

1 Tbsp shallot sliced

parchment paper

1 lime

1 stick of butter

Directions:

Preheat oven to 350 degrees. Wash green pepper, bell pepper. Slice in half broil in oven until tops turn brown. Once roasted take off top char layer, dice.

In a bowl add paprika, salt, pepper. Season each side of fillets.

In a big mixing bowel mix peppers, garlic, shallot, chili, corn, tomatoes

Using parchment paper cut out 4 large heart shape pieces. On one 1/2 of heart place 2 limes.  On top of lime place cod on top with 1/4 cup of vegetable mixture.  Add sliced butter. Then fold other half of parchment across to seal it on one side. Repeat with rest of fish.

Bake 15-20 minutes then top with remaining fresh veggie mixture.
